Improving the service concept of a restaurant with daily management. Example restaurant Johannes

This is a functional thesis. The main issue explored in this thesis was how to improve the service concept of a restaurant with daily management. Restaurant Johannes was used as an example. Restaurant Johannes ordered this thesis to improve the service concept of the restaurant. The sub issues for the theoretical section are the meaning of strategy, determining a service concept, daily management in a restaurant and means of daily management such as a restaurant info, introduction manual and job descriptions.

The thesis includes different theories like strategies and service concepts found from literature and other strategies from the same subject in other thesis. Theme interviews were used in solving the main issue in the thesis. Six of the employees of restaurant Johannes including waiters, shift manager, development manager, personnel manager and the hotel manager were chosen for the interviews. The restaurant info, which includes the job descriptions, the introduction manual and other vital info about the restaurant, was produced with the help of the material obtained from the interviews and from literature in theories from service concepts.

With the help of the restaurant info employees can easily process daily errands and save a lot of time. By using the introduction manual step by step every new employee will also save time. Uncertainty among the employees should be reduced due to the restaurant info.

After being in use for two months (starting from 1.4.2010), the restaurant info has got a lot of good feedback from the employees. With the help of it, daily working has become easier and less stressful. The personnel should keep updating the restaurant info so that it will be updated in the future.
