The target of the thesis was to present the product range of Kouvolan Upseerikerho and to develop the bar operation. The objective of the work was to clarify what kind of opera-tions the bar of the officers’ club has and what kind of product range it has. The research method of the thesis was observation of the personnel of Kouvolan Upseerikerho. Based on the observations, things that required development measures were discovered.

The work was carried out as a functional thesis and the report has been divided into theo-ry and practical parts. The theoretical part of the work deals with product development, product range, coverage calculation, pricing and development of operations. The work implementation -section contains the following topics: stages of the work implementation, product selection, design and implementation of the drink list, coverage accounting and pricing, programming of the cash register and developing of the bar operation.

As the main result of the thesis a new drink list and a price list were created for the bar of the officers’ club. For the use of the personnel use, instructions for making the drinks and for accounting were also made. The effects of the new drink list on sales, the results of the personnel interviews about the performed development measures and my thoughts about the achievement of the thesis targets achievements are presented in the work results -section.
